  • Alpencheddar Albert Kraus, from Algau in Germany, has created a cross-channel collaboration with Mary Quicke from Devon. An unusual blend of a British Farmhouse Cheddar and an Alpine style cheese. It has a distinct sweet, nuttiness, from the Alpine cheese, paired with the acidity of the cheddar, which leads to a tangy finish and flavours of hazelnut and sweet apricot.
  • Produced by Kevin and Alison Blunt on their farm in East Sussex. Using milk from their herd of goats a mixture of British Saanen Toggenburgh and British Alpine Goats. This young cheese is rolled in ash and matured for a couple of weeks. A firm, silky texture with a fresh citrus flavour.

    A hard, raw milk cheese produced between May - September in the Auvergne region of France. Its unique character is partly due to the way it's made, involving the calf suckling before milking which transfers the beneficial bacteria to the milk. Complex, bold and earthy flavour with a buttery texture.
  • A seasonal cheese made by the Hatton's on their remote farm in Nidderdale. Made Spring to Autumn when their small herd of Shorthorn Cows are out grazing on the diverse pasture and wildflower hay meadows. The result is a rich, complex, multi-layered flavour and a soft yet crumbly texture.
  • From Charles Martell, Laurel Farm, Dymock, Gloucester. The rind is washed in perry made from pear juice. The pear variety is "Stinking Bishop"! Soft, sticky, pungent cheese with an aroma worse than its bite.

  • From the Gruyere family. Matured for 18 months in the Franche-Jura region of eastern France. Comté has the highest production of all French AOC cheeses, around 40,000 tonnes per year. Fruity and nutty.

  • Produced in the Yorkshire Dales. A hard blue goats cheese with a beautiful tangy flavour. Encased in blue wax to keep it moist as it matures. Ribblesdale provide award winning artisan sheep and goat cheeses which have a reputation for quality and nutritional benefits.

  • Made by Shepherd's Purse Cheeses in Thirsk. Lavender is added to the sheep's milk to allow the flavour to infuse resulting in a delicate fragrant taste combining with a meadowy sweetness of the sheep's milk.
  • A mountain cheese made from raw milk within the Val D’Aosta, Italy. The texture is tight and dense with a few holes. The flavour is sweet, butternut honey with a trace of acidity. Great for melting.
