A re-creation of the old classic Blue Wensleydale.
Produced by hand by Ben and Sam Spruce in Wensleydale, to a traditional, cloth-bound recipe. It is then pierced and aged for three months which allows the blue veins to appear.
It tastes mellow at first with a mellow, spicy blue flavour.
